The Deleted Menu contains only one button, this button is to View Deleted Documents, this menu is shown below.
Pressing the View Deleted Documents button will present you with a list of deleted documents, to filter down the list of deleted documents you can select an entity from the drop down list. To restore a document you can right click on a document and select restore document, Alternatively with the deleted documents view open you can change to the search menu and press the restore deleted document button in the Document Operations section.
